Ingredients

  • 1-cup brown short grain rice
  • 2 cups water
  • toasted Nori (cut into rectangle serving sizes)
  • one carrot
  • Sesame Seed Rice Dressing:
  • 1/4 teaspoon sea salt
  • 1 tablespoon Dijon mustard
  • 2 cloves garlic
  • 1 tablespoon lemon juice
  • 2 tablespoon white wine vinegar
  • 4 tablespoons soy sauce
  • 2 tablespoons tahini
  • freshly ground pepper
  • Crunchy nuts and seeds:
  • ½ cup raw peanuts chopped
  • 2 tablespoons sesame seeds

Preparation:

  1. Bring water to boil, add rice, cover and simmer for 50 min. Upon completion of cooking time let rice rest covered for 5-10 min. Uncover and fluff with fork.
  2. Prepare dressing and shake in jar.
  3. Toss cooked rice and dressing in a bowl. Add peanuts.
  4. When rice has cooled, form a small rice ball with hand or spoon, place in center of toasted nori square and sprinkle with sesame seeds.
  5. For plating add a small bias cut carrot.
