  • 1 cup 100% maple syrup
  • 1 1/4 cup soy milk unsweetened
  • 1/4 cup safflower or grapeseed oil
  • 1 1/2 cup cornmeal
  • 1/2 cup whole wheat pastry flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon fine sea salt


Preheat oven to 400 degrees

Prepare a muffin tin with paper liners or oil a 9 x 9 pan

Combine wet ingredients in the smaller bowl (syrup, milk,oil)

Combine dry ingredients in the larger bowl

Add wet to dry and mix well

Pour batter into pan and bake for 25-30 minutes, until a toothpick comes clean.

Helpful Tips

Store at room temperature for 3 days.  If you have leftovers they can be frozen.
