When our son moved home last year to save some money and start his own business I noticed the freezer filling up with these little frozen bean burritos from the supermarket. I happened to try one and was only impressed with the fact that he went grocery shopping and found some new vegan foods on his own dime.
One day I became motivated to whip something up and decided to google “vegan bulk food ideas from freezer to oven” thinking I might find a good breakfast burrito recipe. This again proved disappointing.
So this recipe share, is quite literally, the mother of invention.
In our family we tend not to spend too much on gift giving during the holidays, but thoughtful gifts and personal presents are highly valued. That’s how this recipe came about. I made a freezer full of breakfast burritos during the month of December, for Wes, and he is still enjoying them nearly every day. He zaps them in the microwave for four minutes and I inhale that smokey roasted green chile delight that kicks my heart back to summer every single time. It brings a tiny bit of joy to that feeling of always being a mom.
