IMG_1280 copyThis is the most gorgeous smoothie I think I have ever made. It is the perfect balance of flavor, not to mention how excited my palate reacts with all those juicy flamboyant colors swirling around in the Vita-mix.  I wish I was sipping on one right now as I am typing this blog.

I wanted to share this recipe with you and one of our students, Bev Holtzer, who is running the Boston Marathon in just a few weeks!  We finally had lunch together this past Tuesday, and before we parted ways, I had to tell her about this very exciting blender smoothie containing the perfect dose of Beet Power for maximizing her performance during her running competition.  Yes, we all want her to have a great run!

Leave it to Dr. Michael Greger, founder of NutritionFacts.org who uncovered the recent research surrounding beets and their uncanny ability to acutely improve the performance of athletes.  Not surprising, the most recent study shows whole beets are better than just juicing the beet. Beets happen to be the best source of nitrates which help to keep our muscles oxygenated.  The ideal dose is to eat 3, three inch beets, 2 to 3 hours before your competition.

IMG_5355 copyIt’s all legal gain, enhancement vegetables, legit food with plant chemicals! For those of us not running the Big B, it’s also a great veggie “Viagra” and improves blood flow to the brain.  Wow, not bad for a beet.
